I'm not quite sure what you mean by freeze sequences - do you want to 
preserve the gaps/positions for a reference sequence ?  'Locked editing' 
may do what you want - simply select the sequences you want to edit, and 
the rest of the sequences will be unaffected (see here: 
http://www.jalview.org/help/html/editing/index.html ).

Regarding your second question, the find box will search sequence IDs as 
well as sequences. Its instructions are here: 
http://www.jalview.org/help/html/features/search.html

There is a bug in the 2.4 version regarding sequence ID searching which 
means that case insensitive matching sometimes fails - it was discussed 
a few weeks ago on this list. The development version will have this 
issue fixed, but until then, make sure you use the correct case (if you 
know it) when using the find box to search for sequence IDs.
